Potato Pancakes
They say third time’s the charm! My first two attempts to make this earlier in the year were quite unsuccessful: the potato bits were too big, and the wet/dry ratio was off. Although you can use a grater for the potatoes, I prefer slicing them with a knife for better control of the size. Along with the potatoes, beat an egg, and add finely chopped onions, some flour, a dash of pepper and salt to the mixture. For cooking details, refer to the recipe here. 
Potato pancakes are a slight variation of latkes, a Jewish dish traditionally made during Hanukkah. They are also predominately eaten in Europe, and are quite popular among the Germans, Belarusians, and Ukrainians. It’s the perfect food to munch on as I join the Euro 2012 hype!
